Super Bowl Sunday is quite possibly the most famous non-holiday "holiday" in the United States. Nearly everyone watches the game at some point if only for watching some commercials or the halftime show or what not. Normally this culminates in numerous Super Bowl parties in many places around the country, ranging from bars having mega buffets and drink discounts to a few people getting together and ordering a couple of pizzas for the game.

I'll be having 7-8 people come over and do our annual Super Bowl potluck. I'm making three dishes and am posting the recipes. I encourage others to post what they will be making and discuss just what all you will serving on Sunday.

Chicken Chili

1 stick butter, divided
4 pounds boneless, skinless chicken breasts, cubed into 1/2-inch pieces
1/4 cup all-purpose flour
1 large onion, chopped
1 red pepper, diced
1 green pepper, diced
2 cups chicken stock
2 cups heavy cream
2 tablespoons chili powder
1 teaspoon ground coriander
1 teaspoon crushed red pepper
1 tablespoon cracked black pepper
1 tablespoon salt
4 (14.5-ounce) cans cannellini beans, drained
2 (4-ounce) cans mild green chiles
1/2 cup sour cream
1 1/2 cups grated Cheddar, for garnish


Directions
In a large Dutch oven, melt 4 tablespoons butter over medium-high heat. Brown the chicken pieces until nicely colored and cooked through. Remove chicken to a large bowl and set aside.

Using the same Dutch oven, stir in the flour and the remaining butter. This will create a roux. Stir in the onions and peppers. Add the chicken stock to deglaze the pan and stir in the heavy cream. Lower heat and cook until the mixture thickens, about 5 minutes. Once the sauce has thickened, add the chili powder, coriander, cumin, crushed red pepper, black pepper and the salt. Stir and cook for a few minutes. Add the cannellini beans, chiles and the chicken and simmer for another 6 to 8 minutes. At the very end, mix in the sour cream. You are ready to serve and add the cheese on if you wish.

As much as Scots brags about his veggie chili being the best ever, I put this one up for comparison. A wonderful white chili with very little of the afteraffects that Scots' chili is famous for.

Reuben Dip

1 can Sauerkraut
1 8oz. pkg. cream cheese, softened
1 8oz. pkg. swiss cheese
8 oz. thinly sliced corned beef (Carl Buddig is the shit)
8 oz. Sour Cream

Chop the corned beef and mix all the ingredients together. Place in slow cooker until warmed and serve with Wheat Thins.

Cheesy Pizza Dip

1 8oz. pkg. cream cheese, softened
1/2 cup pizza sauce
1/2 cup Mozzarella Cheese, shredded
2 TBSP. grated parmesean cheese
2 TBSP. each of chopped red and green peppers
1 tsp. italian seasoning

Spread cream cheese on bottom of microwaveable plate. Cover with pizza sauce and then the remaining ingredients. Microwave for 2 min. or until heated through. Serve with crackers

So I was uploading pics onto my comp. and totally forgot I took pics for most of this stuff before getting too drunk and stopping.

Chicken Chili

First thing first is to chop everything up so therefore I turn this into this and then
magically turns into .

Because I can, here's a stupide picture of all the beans and chilies I will be using.

This is the finished product here, I forgot to take a picture of the chili in a bowl with the cheese but here it is in the crock pot though.

I forgot to take pictures of making this and remembered to take one just as it came out of the microwave. Doesn't look like much, but it is damn good.
